Chewy Coconut Macaroons Recipe
This is an incredibly easy, 3-ingredient, coconut macaroon recipe. It freezes very well so can be made well in advance.
Ingredients
- 5 1/3 c. long shredded coconut, sweetened
- 1 (14 oz.) can sweetened condensed milk
- 2 tsp. vanilla
Directions
- Preheat oven to 325 degrees.
- Line cookie sheet with parchment paper to prevent sticking (important).
- Mix all ingredients together until fully incorporated.
- Bake for 10 - 12 minutes or until very light brown.
- Transfer to cooling racks to fully cool before freezing (don't freeze if still at all warm).
