Easy Cookie Sandwich Recipe
These are very easy cookie sandwiches (as long as you use pre-made or store-bought cookies). The cookies you choose should be of the soft variety and I prefer chocolate chip. Crisp cookies will make a mess when you try to eat them in sandwich format.
It's also fun to add a couple tsp. of sprinkles (or jimmies as some call them) to add a bit of color. Maybe you should add a little food coloring as well?
Ingredients
- 2 Tbsp. butter, softened
- 1 c. sifted powdered sugar, split
- 2 tsp. milk
- Several drops extract, use any flavor you'd like, such as peppermint, almond, orange, etc...
- 12 cookies, should be soft; chocolate chip work best in my opinion (makes 6 sandwiches)
Directions
- In a small bowl, beat together butter and half of the sugar until fully incorporated.
- Slowly beat in milk, extract, and remaining powdered sugar. Stir in candies, if using.
- Spread on the bottom of six cookies and top each with another cookie.
- Wrap and chill.
Wrap well and store in the fridge.
