Eclair Cake Recipe

This incredibly easy chocolate eclair dessert is made from only five ingredients but can be made for a whole dinner party!

Ingredients

  • 2 (3.5 oz.) packages instant vanilla pudding mix
  • 1 (8 oz.) container frozen whipped topping, room temperature
  • 3 c. milk, 2% or higher
  • 1 (16 oz.) box graham crackers
  • 1 (16 oz.) container chocolate frosting

Directions

  1. In a medium bowl, blend the pudding mix, whipped topping and milk.
  2. Place the frosting in the microwave for about 30 seconds to soften it up so it spreads easier (optional).
  3. Place one layer of graham crackers on the bottom of a 13”x9” baking pan. Evenly spread half of the pudding mixture on top. Add another layer of crackers and the remaining pudding mixture. Top with a final layer of crackers.
  4. Spread the frosting evenly over the entire cake up to the edges of the pan. Cover and chill at least 4 hours before serving (overnight is highly recommended for best texture).
