Molasses Cookies Recipe
These soft molasses cookies are sure to please! They've got wonderful flavor, and for those of you like me who want a little extra kick, it's easy to increase the spices.
Molasses cookies are fairly similar to ginger cookies, however they typically have less ginger and other spices and a bit more molasses.
This particular molasses cookie recipe is a great one for the crackle top that many people look for and it creates wonderfully soft molasses cookies.
For this soft molasses cookie recipe, I like to add all the optional ingredients and increase the dry spices by about 1/2 tsp. for a little extra kick.
Ingredients:
- 2 c. all-purpose flour (a bit more MIGHT be necessary)
- 2/3 c. vegetable oil
- 1 c. sugar
- 1 large egg
- 1/3 c. molasses (1/4 c. if you want less molasses flavor)
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. ground ginger
- 1 tsp. nutmeg (optional)
- 1/2 tsp. vanilla (optional)
- 1/2 tsp. salt (optional)
- 1 small bowl of sugar (optional)
Procedure:
- Preheat oven to 350°F.
- In a large bowl, combine one cup sugar and oil, then add the egg and beat well.
- Stir in the molasses.
- In separate bowl, combine the dry ingredients except the optional sugar.
- Slowly add the flour mixture until fully incorporated.
- Shape dough into small balls, approximately 1 1/4 in. wide and roll in small bowl of sugar, if using.
- Place about 3 in. apart on cookie sheet and bake 12 minutes or until golden brown and tops crack.
- Allow to cook a couple minutes on cookie sheet before transferring to wire rack to cool completely.
