Molasses Cookies Recipe

These soft molasses cookies are sure to please! They've got wonderful flavor, and for those of you like me who want a little extra kick, it's easy to increase the spices.

Molasses cookies are fairly similar to ginger cookies, however they typically have less ginger and other spices and a bit more molasses.

This particular molasses cookie recipe is a great one for the crackle top that many people look for and it creates wonderfully soft molasses cookies.

For this soft molasses cookie recipe, I like to add all the optional ingredients and increase the dry spices by about 1/2 tsp. for a little extra kick.

Ingredients:

  • 2 c. all-purpose flour (a bit more MIGHT be necessary)
  • 2/3 c. vegetable oil
  • 1 c. sugar
  • 1 large egg
  • 1/3 c. molasses (1/4 c. if you want less molasses flavor)
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. ground ginger
  • 1 tsp. nutmeg (optional)
  • 1/2 tsp. vanilla (optional)
  • 1/2 tsp. salt (optional)
  • 1 small bowl of sugar (optional)

Procedure:

  1. Preheat oven to 350°F.
  2. In a large bowl, combine one cup sugar and oil, then add the egg and beat well.
  3. Stir in the molasses.
  4. In separate bowl, combine the dry ingredients except the optional sugar.
  5. Slowly add the flour mixture until fully incorporated.
  6. Shape dough into small balls, approximately 1 1/4 in. wide and roll in small bowl of sugar, if using.
  7. Place about 3 in. apart on cookie sheet and bake 12 minutes or until golden brown and tops crack.
  8. Allow to cook a couple minutes on cookie sheet before transferring to wire rack to cool completely.
