White Chocolate Almond Drop Cookies Recipe
With nothing needed other than a bowl, a spoon and a microwave, these amazing white chocolate almond drop cookies are fantastically simple but delicious.
Ingredients
- 2 2/3 c. white morsels
- 1 1/2 c. crisp rice cereal (e.g. Rice Crispies)
- 1/2 c. peanut butter
- 1 c. almonds (roasted, slightly broken up)
- 1 c. miniature marshmallows
Directions
- Line a cookie sheet with wax paper.
- Place the white morsels in a microwave-safe bowl and, stirring well every 20 seconds, cook until melted, about 1 minute.
- Stir in peanut butter.
- Fold in the almonds, cereal and marshmallows.
- Drop large spoonfuls of the mixture onto the prepared baking sheet.
- Chill fully, about 30 minutes. Store in an air-tight container in the fridge.
Variations:
Try replacing the almonds with M&M’s, but if you don’t want to lose the almond flavor add a very small amount of almond extract into the melted white chocolate morsels, about 1/8 tsp.
Replace the white chocolate with milk chocolate or semi-sweet and add in some coconut flakes.
